If you store the pieces in the freezer, you’ll always have a delightful treat ready. I bet even your guests will start asking for it once they’ve tasted it.

The Ingredients

For 16 pieces

  • 200 grams solid (hard) coconut oil
  • 37 grams erythritol powdered sugar
  • 31 grams cocoa powder
  • 1 tsp vanilla
  • 1/8 tsp sea salt (optional, a little extra for sprinkling)

The Preparation

Place all the ingredients in a tall bowl or a measuring cup. Beat them with an electric mixer on the lowest setting until you have a fluffy, smooth mixture (a kind of mousse). This takes a little while, but don’t give up and let the mixer do its work 😉
Line a mold of your choice (brownie pan, baking dish, etc.) with parchment paper and spread the mixture evenly over it. Put it in the refrigerator and let it set for at least one hour.

After setting, carefully remove the mixture from the mold by lifting it with the parchment paper.
Cut it into the desired size pieces with a sharp knife.
You should place the knife above it and push it down because making a slicing motion will cause it to crumble and fall apart.

If desired, you can gently press some extra salt flakes on top, depending on whether you like this.

Store in a sealed container in the refrigerator or freezer. If you store it in the freezer, let it thaw in the refrigerator for a bit.

Tip: Since the main ingredient is coconut oil, it melts quickly in your hands, so don’t make the pieces too large so you can pop them into your mouth in one go 😉
