Healthy Mayonnaise
Mayonnaise is a cold, white sauce made from oil, egg yolks, vinegar or lemon juice, mustard, and optional flavorings. Many people use this product daily, but unfortunately, they often choose the unhealthy versions… Most mayonnaise available in supermarkets is loaded with bad fats and often contains added sugar. It’s such a shame that most people still often (for convenience) choose these options!
Making your own mayonnaise might seem intimidating, but it’s actually incredibly simple! As long as you follow the instructions carefully, of course. ๐
The ingredients
For a regular-sized jar
- 2 egg yolks (from medium/large eggs, at room temperature)
- about 100 ml mild olive oil or avocado oil
(do not use extra virgin olive oil, as it gives a bitter taste) - a dash of lemon juice (fresh or from a bottle)
- about 1 tsp mustard of your choice (amount depends on taste)
- pepper and salt (amount to taste)
The above is the base, you can, of course, add your favorite seasonings,
such as garlic powder, truffle oil, paprika powder, etc…
The preparation
Place the egg yolks in a tall glass or a high measuring cup, along with the mustard, lemon juice, and pepper and salt.
Whisk this for about a minute at the highest setting of the mixer (using a whisk), until it thickens slightly.
While continuing to mix, very slowly add the olive oil in a thin stream, along the side of the glass. If the oil blends well, you can add it a bit more quickly; play around with the speed. If the oil sits on top, you’re adding it too quickly. Pause and mix until everything is well combined again.
Taste to check if the flavor suits you or if you want to add more of a certain ingredient. If the mayonnaise is too thin, you should mix it for a bit longer; if it’s too thick, add a bit more oil.
Storage tip: Keep the mayonnaise in a sealed jar or container in the refrigerator. Fresh mayonnaise is (when refrigerated) good for at least 3 days.
