Cheddar is a yellow to orange-yellow, slightly tangy hard cheese made from cow’s milk, originally produced exclusively in Cheddar, a village in Somerset, England. The cheese matured in several caves there, where the temperature, humidity, and light conditions are very consistent.
Because cheddar is now made in many different countries, according to EU guidelines, this cheese is no longer protected as a regional product.
Tip: A block of cheddar cheese generally contains 0 grams of carbohydrates. These are available in most supermarkets in the fresh section. Be cautious with pre-packaged slices and bags of grated cheddar, as they often contain additives to extend shelf life and prevent the cheese from sticking together. However, this can result in an undesirable amount of carbohydrates from products that do not fit a ketogenic lifestyle. There are now more pre-packaged cheddar slices that are suitable, but be sure to check the packaging. 😉
Ingredients
The amount of each ingredient you need depends on how much you want to make. Use about 100 grams of chicken breast per person.
- Chicken breast (cut into small strips)
- Cheddar cheese (sliced)
- Thin slices of bacon or breakfast bacon
- Pepper and salt (amount to taste, keep in mind that bacon and cheese are already salty)
- Optional: other seasonings (to taste), such as smoked paprika powder, onion powder, garlic powder
Preparation
Preheat the oven to 230 degrees Celsius (446 degrees Fahrenheit) and line an oven rack or baking sheet with parchment paper (or a baking mat).
In a bowl, mix the chicken breast with the seasonings of your choice and let it marinate for at least 10 minutes.
Place a slice of cheddar on each piece of chicken and wrap it with the bacon. Make sure no cheese is visible; it would be a shame if the cheese leaks out during baking.
Place the chicken pieces on the oven rack and position it in the middle of the oven. Bake the chicken for 13-16 minutes (depending on the thickness of the chicken) until the chicken is cooked and the bacon is crispy. Optionally, you can put them under the grill for a few more minutes for extra crispy bacon.
If desired, garnish with some additional finely chopped strawberries/coconut/ketoproof chocolate/cacao nibs/roasted almonds.

You can prepare the pieces in advance, up to the point where they go into the oven, then store them covered in the refrigerator until you are ready to bake them.
