Mouthwatering keto chicken nuggets

Delicious chicken pieces from the oven, a treat just for yourself, but even more fun to make with any children/grandchildren you may have. Guaranteed that they will also enjoy this!

In contrast to most crispy chicken, with these Fully keto tender chicken tenders, you don’t have to deal with a deep fryer, or end up with a gas stove covered in splatters… Especially with the added breadcrumb tip, making these is really a piece of cake!

Ingredients

For 4 servings:

  • 400 grams of chicken breast (cut into pieces and slightly flattened between plastic wrap)
  • 1 large egg
  • 1 tablespoon of liquid, unsweetened heavy cream
  • 60 grams of almond flour
  • 20 grams of finely grated Parmesan cheese
  • ½ teaspoon of salt
  • ¼ teaspoon of pepper
  • ½ teaspoon of paprika powder
  • ¼ teaspoon of onion powder
  • Olive oil (in spray form)

Instructions

Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit) and line a baking sheet with parchment paper or a baking mat.

In a bowl or deep plate, mix the almond flour with the cheese and the spices. In another bowl beat the egg with the heavy cream.

Dip the chicken pieces first into the egg mixture, then into the breadcrumb mixture. Place the chicken on the baking sheet and spray a little olive oil over the chicken pieces.

Place the baking sheet in the middle of the oven for 15-20 minutes, turning the chicken pieces over halfway through. When the chicken pieces are golden brown and cooked through, they are ready.

Breadcrumb Tip:
The above method is the traditional way to breadcrumb. However, I have since discovered a much easier method that will save you a lot of time!

Put everything for the breadcrumb layer in a large airtight container (one with a lid) and mix it well. Dip the chicken into the egg mixture, drain the excess egg mixture from the container (you can use a sieve or strainer if needed), and place the chicken in the container with the breadcrumb mixture.
Put the lid on and shake it!
Shake everything as well as possible in the container. And voilà! The breading is done!

Serving Tip:
Serve the pieces as a snack or side dish alongside vegetables of your choice. These chicken pieces are also delicious cold (for example, in a salad).

Keto Tip:
Since this dish is higher in protein than in fats, it is recommended to serve it with a fatty sauce (such as mayonnaise) or to take this into account in your overall daily meal plan.
