Keto Chicken Schnitzel with Creamy Herb Sauce

This recipe not only gives you the option to enjoy a breaded schnitzel again but also provides you with a delightful sauce to go with it—double the joy!
Regular breadcrumbs are, of course, not suitable for a keto lifestyle since they are made from grains that are high in carbohydrates. But not in this recipe! In this recipe, you’ll use almond flour to achieve that deliciously crispy coating.
Ingredients
For 4 servings
For the schnitzels:
- 4 chicken breasts (flattened as thinly as possible between plastic wrap)
- Approximately 100 grams almond flour
- Garlic powder (amount to taste)
- Onion powder (amount to taste)
- Salt and pepper (amount to taste)
- 2 large eggs (*size M*)
- Coconut oil / butter / olive oil (*for frying*)
For the sauce:
- 3 tablespoons extra virgin olive oil
- 6 tablespoons (*homemade*) mayonnaise (click here for the recipe)
- 3 tablespoons mustard
- 1 ½ teaspoons smoked paprika powder
- Salt and pepper (amount to taste)
Preparation
First, dip the chicken in the egg and then in the almond flour.
Fry the schnitzels in a generous amount of coconut oil / butter / olive oil until they are golden brown and cooked through. Try to turn the schnitzels as little as possible to keep the breading intact.
Mix all the ingredients for the sauce together, taste to see if the ratios are to your liking, or if you want to add more of a particular ingredient.
Serve the schnitzels with the sauce and your choice of vegetables.
