Deluxe Meal Salad
In addition to all the recipes from my cookbooks, I’ve also put together a delightful selection of recipes for you that may not be cookbook-worthy but are still very tasty and simple to make! Including this delightful dish.
This is a salad that frequently appears on my menu. The ingredients are simple, but together they create such a delightful flavor experience.
The Ingredients
For the Salad
- 2 baby romaine lettuces (sliced into thin strips)
- 1 large avocado (diced)
- 4 slices of crispy bacon (crumbled)
- 100 grams of smoked chicken breast (cut into pieces)
- A small handful of walnuts (broken into pieces)
- 3 boiled eggs (sliced or cut into wedges)
For the Dressing
- 1 heaping tablespoon of Greek yogurt
- 1 heaping tablespoon of mayonnaise (See here for an easy and quick way to make healthy mayonnaise)
- Pepper and salt (to taste)
- A small squeeze of Steviala Sweet Bee
Preparation
Mix all the ingredients for the dressing well. Place the finely chopped lettuce in a large bowl or dish and mix in the dressing. Distribute all the other ingredients over the lettuce and serve.
