Creamy Spinach with Salmon, Bacon, and Egg

This dish is quick to prepare, packed with flavor, and loaded with good nutrients!

Ingredients

  • Salmon fillets (cut into pieces)
  • Bacon bits
  • Eggs (boiled)
  • Fresh spinach (finely chopped)
  • Chestnut mushrooms (sliced into pieces or slices)
  • A dash of liquid whipping cream or cooking cream
  • Pepper and salt (to taste)

Preparation

Fry the bacon bits until they are crispy in a large skillet. Add the salmon pieces in the last few minutes and cook them until they reach your desired doneness. Remove the bacon and salmon from the pan and, in the same pan, sauté the mushrooms for a few minutes, stirring occasionally.
Add the spinach to the pan in batches, stirring until it wilts. Now, add the cream of your choice and season with pepper and salt to taste. Mix everything together and let it simmer over low heat until the mushrooms reach the desired doneness, stirring occasionally. Add the bacon bits and salmon pieces back to the mixture and stir for a few more minutes to warm them up.

Serve the dish with the boiled eggs.
