Ingredients
For 6 muffins:
- 500 grams of your choice of ground meat
- 1 small onion (finely chopped)
- 12 slices of bacon
- 2 cloves of garlic (pressed)
- 1 egg
- 45 grams of grated cheddar*
- 50 grams of sugar-free ketchup
- ½ tsp dried oregano
- Salt and pepper (to taste)
- 1 tbsp dried parsley
*Tip: A block of cheddar cheese generally contains 0 grams of carbohydrates and is usually available in the fresh food section of most supermarkets. Be cautious with pre-packaged slices and bags of grated cheddar, as they often contain additives to extend shelf life and prevent the cheese from sticking together. These additives can introduce unwanted carbohydrates that don’t fit a ketogenic lifestyle. However, there are now more pre-packaged cheddar slices that are suitable, so be sure to check the packaging.
Instructions
Preheat the oven to 200 degrees Celsius (392 degrees Fahrenheit) and prepare muffin molds.
Mix all the ingredients, except for the bacon, thoroughly.
Place two slices of bacon in each muffin mold, pressing them against the sides so that the ground meat is lined with bacon. Fill the molds with the ground meat mixture.
Place the molds in the middle of the oven for about 30-35 minutes, depending on how full the molds are.
Let the muffins cool for about 5 minutes before removing them from the molds.
You can prepare them in advance and bake them later by covering and refrigerating them. You can also pre-bake them and reheat them later in the oven.
The muffins are delicious both warm and cold.
