Strawberry Coconut Chia Pudding

You won’t regret it! The combination of coconut and strawberries is so delightful. The creaminess of the coconut milk gives this chia pudding a velvety texture in your mouth, making every bite pure enjoyment!

Ingredients
For 2 servings
- 3 tbsp chia seeds
- 2 tbsp shredded coconut
- 1 tsp vanilla extract
- Erythritol powdered sugar (to taste)
- 250 ml full-fat, unsweetened coconut milk (can be replaced with unsweetened almond milk)
- A few strawberries (cut into small pieces)
- Optional: extra shredded coconut or coconut flakes for garnish
Preparation
Mix all the ingredients, except the strawberries, together thoroughly. Cover and place in the refrigerator. Let it sit in the refrigerator for at least a few hours (overnight is also fine) so that the seeds can absorb the liquid. Ideally, prepare it the night before so it can sit overnight, and you’ll have a delicious, quick, and simple breakfast in the morning.
Stir once more before serving and add the pieces of strawberries.
Important note about chia seeds:
Chia seeds have a blood pressure-lowering and blood-thinning effect. So, never use chia seeds if you are already taking medication for fluid retention, blood pressure, or blood thinning without consulting your healthcare provider first.
