Delicious cheesecake chia pudding with strawberries
My first thought after the very first bite was, WOW! A strawberry cheesecake chia pudding that truly tastes like strawberry cheesecake… What more could one ask for?

This has undoubtedly become one of my favorite breakfasts!

Ingredients
For 1 serving
- 55 grams of cottage cheese
- 1 tablespoon of Greek yogurt
- 125 ml of unsweetened almond milk
- A small pinch (or a drop) of vanilla
- 2 teaspoons of erythritol powdered sugar
- 2 tablespoons of chia seeds
- 50 grams of strawberries
Preparation
Put all the ingredients, except for the chia seeds, in a blender (or in a tall glass and use an immersion blender) and puree until everything is well mixed, and you have a smooth liquid.
Take a sealable container and pour the pureed mixture into it. Mix in the chia seeds thoroughly and then place the container in the refrigerator for at least 24 hours. The longer it sits, the thicker it will become. Stir the chia pudding before serving.
If desired, garnish with some additional finely chopped strawberries, coconut, keto-friendly chocolate, cacao nibs, or roasted almonds.
Important note about chia seeds:
Chia seeds have blood pressure-lowering and blood-thinning properties. So, never use chia seeds if you are already taking diuretics, blood pressure-lowering, or blood-thinning medications without consulting your healthcare provider first.
