The Ingredients

  • 65 grams >almond flour
  • 1 ball of mozzarella
    (torn/cut into very small pieces)
  • 2 tsp baking powder
  • 4 eggs (size M)
  • 40 grams of butter (at room temperature)
  • Grated cheese of your choice for sprinkling
    (or as an extra filling)
  • Onion powder
    (amount to taste, I usually use about 1 tsp)
  • Garlic powder
    (amount to taste, I usually use about 1 tsp)
  • 1 small red onion (finely chopped)

The Preparation

Preheat the oven to 180 degrees Celsius (356 degrees Fahrenheit) and prepare the bread molds (or muffin molds) you want to use.
Mix all the ingredients together until you have a well-combined batter.

Fill the molds with the batter, but don’t fill them all the way to the top, as the rolls will expand in the oven. If desired, sprinkle some grated cheese on top of the rolls and place them in the middle of the oven for about 20 minutes (the baking time may vary slightly depending on the molds you use).

Store the rolls covered in the refrigerator or divided into portions in the freezer. They are delicious as they are, without toppings, but they also taste great with a slice of salami or ham.
